It was revealed in July that a new restaurant called The Green Pig was making its way to Clarendon, and today the Washington Post catches up with chef and owner Scot Harlan. He's got some ambitious plans for the menu that will focus on whole animal cooking and may have things like steak frites. Harlan also discusses one other thing he might do with the menu: "You know, how Chinese restaurants have their own ‘other’ menu or something like that? You got to get into the club first. I don’t know...I think people are moving in that direction." [WaPo]
