Brendan Cox takes farm-to-table pretty seriously. The chef is leaving his post at DC Coast on March 15 and moving to North Carolina to run his own farm that will eventually support a restaurant of his own. Cox told Todd Kliman: "It's a unique opportunity for us to build an integrated system where we can grow what we want for the restaurant, raise chickens, bees and pigs and return organic matter from the restaurant back to the farm in the form of compost."
