Le Vieux Logis, which has been serving its traditional French fare in Bethesda for 31 years, has recently made some big menu changes. Some dishes have been dropped — or made lighter like the salmon now served with a saffron shallot sauce rather than a heavy port — as owner Diana Dahan makes a play for new customers: "The young [people] think French dining is rich, stuffy and expensive.
