When Del Ray's new Pork Barrel BBQ opens — perhaps as early as next month — patrons can expect your basic barbecue menu. But that won't last for long. Once the restaurant finds its legs, owner Heath Hall says they intend to do some serious experimenting. Beyond the brisket, pork ribs, pulled pork, chicken and sausage that are in the works for Pork Barrel's menu, they'll eventually be offering more exotic specials like buffalo brisket, lamb ribs, smoked venison loin and Kansas City-style burnt ends sandwiches. All that should pair well with the vintage sodas and grilled rosemary hard lemonade that'll be giving a lineup of local draft beers a run for their money.
