Now that the Hilton McLean Tysons Corner is the hotel's new corporate flagship, it needs a new restaurant to match. Though the rest of the renovations are not yet complete, that restaurant, Harth, is officially open today. The warmly hued dining room seats 120 and features floor-to-ceiling windows and herbal centerpieces. Executive chef Thomas Elder is behind the kitchen here that offers breakfast, lunch and dinner menus. The emphasis is on locally sourced food, whether it be from The Organic Butcher in Charlottesville or from Elder's own pepper-and-mint garden and beehive program. A wood-burning oven means flat breads are on the menu, along with salt roasted beets, a 72-hour braised beef short rib and a variety of small plates.
