In an interesting follow-up to this weekend's Top Dog Half-Smoke Challenge at Domaso, Tim Carman talks to several of the participating chefs and realizes that none of them really know what a half-smoke is supposed to be. While Philadelphians and Chicagoans are uber-defensive of their signature snacks, "we in the District of Columbia don’t have any half-smoke traditions to defend.
