Bryan Voltaggio is going to be one busy guy come 2012: The Top Chef alum is planning to open two new restaurants in the first half of next year — that on top of the cookbook he's penning with his brother Michael that's due out this fall. Tom Sietsema drops the bomb today that Voltaggio will open his second restaurant in Frederick in early 2012 — just down the block from Volt — modeled after Mario Batali's Eataly. According to Sietsema, the tentatively named North Market Kitchen "will be a combination 200-plus seat dining room, specialty store and exhibition kitchen with multiple stations serving pasta and charcuterie made in-house, a raw bar, cheese counter, patisserie and rotisserie." They'll be hiring 40-50 cooks to do the job, so get those applications ready.
And for Washingtonians who'd rather not haul out to Frederick, the spring of 2012 means the opening of a third Bryan Voltaggio restaurant at the Chevy Chase Pavilion. There's not too much information yet about the unnamed project other than that it'll be a steakhouse-like bistro that uses whole animals and sports an open kitchen.
