Yesterday, without too much fanfare, Sauca opened its first brick-and-mortar restaurant out on Columbia Pike. Farhad Assari, owner of the rapidly expanding food truck empire, says the counter-service restaurant will have all the same global street food that the trucks dish out, plus a few new options: two types of wood-fired chicken (Peruvian-style and spicy lime), salads (Greek and Thai chicken noodle), and toffles (waffles with toppings). Sundays will bring a pig roast that involves a breakfast dish made with fries, pulled pork, barbecue sauce, cole slaw and a sunny-side-up egg. Sauca hopes to get its liquor license in the next couple of weeks, too, which means margs and pina coladas on the patio.
