José Andrés dropped by the Eater Lounge at the Food & Wine Classic in Aspen on Friday to talk about his America Eats Tavern pop-up, his respect for ketchup and the decision to shutter Cafe Atlantico. The chef noted that the Penn Quarter restaurant didn't close because of the economy — it had never been busier. "And sooner or later it will find a home, because it's a great concept. But we were doing too many things. We did farmers market on Fridays, we did Minibar, we closed on Mondays to do research. I want the next place to be more focused." [-EN-]
