Oh Fish, Kaz Okochi's new design-your-own sushi joint, opened up yesterday near Farragut Square. Quite the departure from the chef's 12-year-old Kaz Sushi Bistro and its foie gras sushi, this 15-seat casual restaurant is geared to the downtown lunch crowd with takeout maki. And while there are a few set menu options, the main draw here is the customizable sushi. The ordering process is multi-step: Pick from an extensive menu of proteins, vegetables, flavorings and sauces and then sit back while they make it to order. As you can see in the gallery above, they've also got some gadgets for your enjoyment like a miso soup dispenser and a maki maker. Oh Fish is open from 7 to 7 on weekdays.
