Dining Bisnow profiles BLT Steak's Victor Albisu and his mom, who happens to own a Latin market in Falls Church called Plaza Latina. It turns out that's where the chef got his start as a kid selling sandwiches under a sign reading "Victor's Deli." Albisu also apparently studied to be a diplomat, skills evident in his answer to the question of who cooks at home: "My wife cooks so well and my mom cooks so well. I have to get in line." [DBN]
