More and more restaurant owners are getting in touch with their buildings' pasts. In this week's Young & Hungry column, Jessica Sidman talks to the people behind such places as Chez Billy, Sixth Engine and the upcoming Matchbox about how they paid tribute to their properties' previous uses (the Matchbox space used to be Club Bali) when designing the new spaces.
