Pastry chef Tiffany Coln, who previously made desserts for Toki Underground, is headed to Jin, an Asian-Caribbean lounge over on 14th St. NW. Coln says her job will be to re-introduce desserts to their menu.
The pastry chef is also connected to an upcoming project over on H Street NE, though she did not give exact details. "At both locations, I intend to continue with my contemporary take on classic American desserts," she said, citing such examples as miso chocolate chip cookies and matcha cheesecake with sake-sauteed black plums. Coln will be taking special dessert orders for Thanksgiving, and plans to release her menu for that in the next few days.
