What's the difference between a legitimate restaurant compliant and impossibly high standards? Todd Kliman is asked as much today during his weekly Washingtonian chat, and he believes that if you're paying more than $100 a person, high expectations are just fine. "I'm not going to tell a sports bar that its chicken wings are only fair. I'm not going to tell a greasy spoon that my steak was medium when I asked for medium-rare.
