A Look Inside DGS Delicatessen Downtown

Jewish tradition meets modern cooking with DGS Delicatessen, which opened for dinner service last night at 1317 Connecticut Ave. NW. The 80-seat restaurant, bar and sandwich shop is from chef Barry Koslow, general manager Brian Zipin and owners Nick and David Wiseman. Check out the gallery above, and see the restaurant's open kitchen, exposed brick walls, multi-level layout, picturesque windows and nostalgic photos.

As for the cooking: modern and traditional styles meet in such dishes as smoked chicken with schmaltzy greens, pickled turnips and pomegranate — or you can just stick with a classic pastrami sandwich. The restaurant is trying to cook seasonally and do much of the work in-house, from smoking fish to brining pickles.
