Jewish tradition meets modern cooking with DGS Delicatessen, which opened for dinner service last night at 1317 Connecticut Ave. NW. The 80-seat restaurant, bar and sandwich shop is from chef Barry Koslow, general manager Brian Zipin and owners Nick and David Wiseman. As for the cooking: modern and traditional styles meet in such dishes as smoked chicken with schmaltzy greens, pickled turnips and pomegranate — or you can just stick with a classic pastrami sandwich. The restaurant is trying to cook seasonally and do much of the work in-house, from smoking fish to brining pickles.
