The traveling pork celebration known as Cochon 555 is winding its way toward Washington, DC, for this year's April 22 event at the Liaison Hotel, and now a rep sends over the flyer to your right revealing the five local chefs who will be participating in the five pig cook-off.
Returning this year to defend his title as last year's champion, Scott Drewno of The Source leads the list of contenders, followed by Nicholas Stefanelli (Bibiana), Ed Witt (701), Mike Isabella (Graffiato) and Wes Morton (Art and Soul). As usual, each chef will be given his own heritage breed pig to create meals to pair with five wines for a crowd of meat hungry gourmands and a panel of industry experts who would crown one chef The Prince or Princess of Porc.
As for the special guests? Well, Wagshal's Pamela Ginsberg returns to do a butchering demonstration, and David Varley of the Michael Mina Group (and formerly chef over at Bourbon Steak) will participate in "an interactive tasting contest with Le Creuset." Meanwhile, current Bourbon Steak chef Adam Sobel will be in charge of the final pig that comes out after the competition. Tickets are available online.
