Bibiana's Squid Ink Pizza With Octopus Salami

As part of Eater's first ever Pizza Week, chefs at six major Washington, DC restaurants agreed to make a special limited edition pie, served just this week. Every day we'll highlight a new one. On deck today: a squid ink pizza from Bibiana.

Nicholas Stefanelli worked at several top Italian restaurants — Galileo, Maestro, Fiamma — before taking on the executive chef role at Bibiana. Since the restaurant opened in 2009, there has been a lot of well-deserved gushing over Stefanelli's pasta. This week, Bibiana offers a squid ink pizza with octopus salami, tomato, oregano and red chiles. Explains Stefanelli: "I wanted to do pizza with octopus, and by incorporating the squid ink we were able to tie the flavors together, and allow the dish to come full circle. Its also something I haven't seen on other menus so I wanted to give it a try!"
