As part of Eater's first ever Pizza Week, chefs at six major Washington, DC restaurants agreed to make a special limited edition pie, served just this week. Every day we'll highlight a new one. On deck today: Venison Sausage Pizza from Urbana.
[R. Lopez]
There's a lot to love on the menu at Urbana, and the Dupont Circle wine bar's pizza offerings are no different. This week, chef John Critchley has got a killer addition to the pizza list in honor of Pizza Week: a fresh venison sausage with pea tendrils, spring garlic and gruyere cheese pizza. Critchley picked the ingredients to mark the seasonal changeover — venison from the winter and pea tendric and garlic from the spring and summer seasons. Meanwhile, the gruyere was to add an earthiness to the pizza.
Want a taste? Urbana's Pizza Week pie will be available all week for $18 during lunch and dinner services both at the bar and in the dining room. Between lunch and dinner, it will be available at the bar only. And stay tuned to get a peek at the rest of our limited edition pies from Graffiato, La Forchetta and both Rustico locations.
