There's been some serious shuffling around in the pastry world recently, and today brings word of another. The team at Fiola announces that they've poached the capable Tom Wellings away from Equinox to replace Jason Gehring. Wellings previously worked with chef Fabio Trabocchi at both Maestro and his New York restaurant Fiamma. And, yes, zuppa inglese and bomboloni are still on the menu. [EaterWire]
