In a major coup for Bloomingdale residents, Tom Sietsema reports that a couple of Proof alums are behind a forthcoming "Italian-influenced American restaurant" in the neighborhood. The Penn Quarter favorite's former sommelier Sebastian Zutant and executive sous chef Mike Friedman are teaming up with a Vegas restaurateur to open the 50-seat Red Hen at First Street and Seaton Place.
