To defend himself, Carman tries — and fails — to figure out if there's a truly correct spelling for the dish: "Trying to track down the root of “seviche” or “ceviche” or “cebiche” — the principal spellings of the word — will send you down an etymological rabbit hole, where you will remained trapped until the rescuers arrive."
