Forthcoming Mount Vernon Square eatery Silo will serve "lots of cheese" when it opens before the end of the year. The American restaurant with a "Swiss-French twist" will come to 919 5th St. NW from owner Reza Akhavan and chef George Vetsch, previously of C.F. Folks, will helm the kitchen.
Look for dishes like vanilla-braised frog legs with garlic risotto and pork stew in a paprika sour cream sauce with grilled rapine and pepper tagliatelle as well as a wine list focusing on small domestic and western European producers and craft beer, cider, and bottles of Belgian ales and sour ales.
