BLT Steak has a new chef to replace the recently departed Jon Mathieson. The restaurant sent out a press release over the holidays highlighting new chef Jeremy Shelton. Here are three changes in store for the restaurant, due to the new chef's influence:
· Way more Wagyu: One of the chef's priorities is to expand BLT Steak's Wagyu beef program.
· Homemade jerky: Shelton's a hunter, and is planning to add jerkey to BLT Steak's offerings — and not just the beef variety. Expect elk, wild boar and venison on the restaurant's bar menu.
· Italian influence: Shelton spent some time cooking at Scott Conant's Scarpetta restaurant. He expects to use the Italian cooking techniques he learned there in a variety of blackboard specials.
Shelton's resume also includes stints at Azul in Miami, as well as the Miami outpost of Bourbon Steak.
