Curious about The Grill Room, the restaurant within the new luxury Capella Hotel in Georgetown, will look like? Eater has a rendering of the space, opening in April. Peter Silling and Associates designed the space.
The restaurant is being overseen by Swedish chef Jakob Esko, who will also be in charge of the hotel's The Rye Bar. The Grill Room's focus is hand-cut meats, seafood and dishes prepared tableside, while the Rye Bar, unsurprisingly, will emphasize rye whiskeys, as well as cocktails and bar food. The menu of The Grill Room will change each day, with dishes like American Wagyu with pancetta and onion tart. The restaurant will serve lunch, too.
Those feeling festive will be able to share a toast, picking a selection from the restaurant's champagne cart. Meanwhile, the 26-seat Rye Bar will have a bunch of rare whiskeys available, such as Abraham Bowman 10 year and Willett 5 Year Single Barrel.
