John Critchley is the New Chef at Bourbon Steak

Adam Sobel already has a replacement at Bourbon Steak. Urbana's John Critchley has taken on the role of executive chef at the Georgetown restaurant, according to a release from the company.

Critchley will take on the role March 18. Sobel's last day was Sunday. Sobel has now moved on to a new job as executive chef and partner at RN74, another Michael Mina restaurant and wine bar in San Francisco.

Before Urbana, Critchley has worked at such restaurants as Ford's Colony Dining Room in Williamsburg, Trellis, Clio Restaurant in Boston and Area 31, another Kimpton concept. He was also Eater's Hottest Chef 2012. He will continue Bourbon Steak's local pasture-raised and dry aged meat program, and plans to make new connections with local farmers.

Update: A statement from Kimpton wishes Critchley the best and says the company is searching for a new Urbana chef. "The concept will remain the same, but will reflect the chef's talents and experiences, as well as complement the work that Anthony Pilla is doing at the pizza bar," it reads.
