Local Spanish tapas chain La Tasca has appointed Josu Zubikarai to oversee all five of the company's restaurants.
The chef opened D.C. Spanish institution Taberna del Alabardero back in 1989, and brought a lot of acclaim to the restaurant, which was an early pioneer of Spanish cooking in D.C. Zubikarai served as kind of an ambassador for Spanish cooking in the U.S. during those years. His cooking style is influenced by the Basque region. La Tasca President Javier Candón remained friends with the chef after he left D.C. and encouraged him to return for the new job.
Zubikarai will switch up La Tasca's menu for spring, but in the meantime has been working on the Cherry Blossom-themed menu for the restaurant, with dishes like Cherry Blossom sangria and ensalada de langostinos with an avocado cherry vinaigrette.
