1789 is stepping up its dessert game. The restaurant has hired Ryan Westover to take over the position of pastry chef, according to executive chef Anthony Lombardo. Westover started this week.
Westover comes to the restaurant from Poste Brasserie, where he earned a nomination for Food & Wine Magazine's The People's Best New Pastry Chef. 1789 recently had worked with a couple short-term pastry chefs who didn't work out before bringing Westover on board, Lombardo said.
"He is going to put a nice twist on our classic American desserts; his style is perfect for us," said Lombardo. "He's very playful, very creative—like we do, he likes to use a lot of seasonal ingredients in the spring and summer, and a lot of chocolate in the winter." Visitors to the restaurant can try out the chef's new cookies and confections plate, and he'll be adding to the menu from there.
