A Look Inside Chef-Driven Taqueria Taco Bamba

Tacos and Not Tacos are here. Taco Bamba, chef Victor Albisu's taqueria, opened this week in Falls Church. The restaurant was primarily designed to be a takeout location, with room for about 25 people standing. There's an open cooking area, red and grey tiles and a counter for those who wish to linger. Located at 2190 Pimmit Drive in Falls Church, the restaurant is just a few doors down from Albisu's mother's Plaza Latina food market. Taco Bamba is in part inspired by Victor's Deli, a sandwich counter that Albisu set up at his mother's market — at the age of 12.

Once inside the space, guests get to choose from a menu of tacos and "Not Tacos". The latter is offered in both traditional and fancier flavors (think sweetbreads). The Not Tacos, or "Tacnos", options, include Mexican street food dishes including quesadillas, a "Bamba Burger" and a Cuban sandwich.
