Urbana has a new chef in Ethan McKee, who wants to lighten up the menu a bit. The chef, a replacement for John Critchley (now at Bourbon Steak) has a resume that includes the former Rock Creek at Mazza and Circle Bistro, Tom Sietsema reports. [WaPo]
