The Red Hen has only been open for a couple months, but the Bloomingdale restaurant is already at work on a collaboration beer with a local brewery and winery.
The restaurant will tap its first keg of Sailing the Seas of Lees next Tuesday. They're making the stuff in partnership with DC Brau and Linden Vineyards out of Virginia. It's a project that beverage director and co-owner Sebastian Zutant has been working on for some time.
The beer is aged for six weeks in oak barrels that Linden provided. The result is a citrus-flavored Saison that tastes similar to a cider or dry white, according to Zutant. The beer will be priced at $7 per glass until eight kegs of the stuff are sold out.
