Local Menus Have a Nordic Influence this Fall

D.C. may still be lacking in the strictly Nordic restaurant category, but influential cooking techniques from those countries are beginning to show up on some area menus.

The Grill Room, whose chef Jakob Esko hails from Sweden, is planning to host two Swedish culinary stars from Gothenburg for two nights in October. Hans Boren of 28+ and Johan Bjorkman of Kock & Win will participate in a pop-up event at the Capella Hotel restaurant on October 24 and 25. The team will offer multi-course lunch and dinner options with dishes from each chef on those days ($35 for lunch and $75 for dinner).

Additionally, Equinox's Todd Gray is at work on a Nordic tasting menu for Equinox. The chef was recently inducted into the Norwegian Seafood Council's Chefs Culinary Board and traveled to Norway to learn more about the cuisine. The menu is still in progress but should debut in October.
