Domenico Apollaro will be in the kitchen at Lupo Verde, the 14th Street Italian restaurant opening in mid-February. Apollaro has been appointed Chef de Cuisine by owners Med Lahlou and Antonio Matarazzo.
Apollaro is a native of Italy who has worked at such restaurants as Eat's Easy Restaurant in Milan, Osteria Vista in Zurich and Altri Tempi (also in Italy). He owned and operated three restaurants in Villapiana, Italy and is moving to D.C. for the gig.
Apollaro's menu will include small plates like cheeses, antipasti and charcuterie, along with wood-fired pizzas, paninis, pastas, fish and meats. The restaurant is going to offer an extensive to-go menu and a cheese shop within the restaurant. Here's Eater's early preview.
