Liam LaCivita On the Hunt for His Own Place

D.C. hasn't seen the last of former Liberty Tavern chef Liam LaCivita, even though he'll be doing a temporary stint out of town. The chef told Eater he's joining the team of his brother's new restaurant, Pomegranate, in Richmond, Va., which is opening next week.

But the move is only temporary. LaCivita's working on confirming a location for a new venture. He's keeping the name and potential spot under wraps for now. "My place will focus on the food I love, I grew up on, and that I am personally passionate about," he said. He'll have a house-made cheese program, with an emphasis on Italian cheeses, and he plans to make his own Italian regional sausages as well. The restaurant will have a bread program that emphasizes the breads of Puglia and Abruzzo, and will also serve homemade pasta that "would make my father and grandparents proud." LaCivita left Liberty Tavern after eight years with the restaurant and its siblings. He's been replaced by Matt Hill.
