It's no secret Scott Drewno knows a little bit about dumplings. As chef at Wolfgang Puck's The Source, making them is a huge part of his daily routine. Those who would like to learn his secrets can do so just in time for Chinese New Year. He'll be hosting a dumpling-making class on Saturday, February 1 (more details here). In the meantime, he walks Eater through the process of making a pork dumpling, from forming his own dough to dropping them in the pot.
