Word came out today that chef Billy Klein has departed Cleveland Park's Pulpo restaurant for a gig with Joe's Seafood, Prime Steak & Stone Crab. So what's the future look like for the Spanish restaurant?
Director of Operations Dave Hansen tells Eater he's re-donning a chef's jacket and tightening up the menu at Pulpo. Look for some additions on the more exotic end of the scale, like molecular creations and lionfish, and more of a local focus to the ingredients.
The restaurant also has some bigger plans for the future, though details are under wraps for now: a pop-up in the space, a refresh to the design and some rebranding are all on the way.
