Chef Ed Hardy is making sure commuters and travelers alike have breakfast sandwiches and salmon BLTs to eat, courtesy of his new food trailer.
The chef left Quench in Rockville after owner Michael Holstein sold the place. He's going to operate a food trailer at the new Reston Station Plaza called Bacon N' Eds.
"I'll be cooking stuff that I love," Hardy told Eater. That means menu items ranging from biscuit sandwiches to banh mi, as well as grilled pretzels and tarte flambe. Any dish can be accented with the chef's own homemade bacon.
Hardy will work with some local food purveyors like Meatcrafters. The trailer will also launch his wife Francoise Villeneuve's new line of chocolates and sweets, Wiggly LeRoux. The pastry chef plans to eventually open her own kiosk at the plaza.
The trailer will operate from 6-10 a.m. Monday through Friday and 4-8 p.m .Wednesday through Friday to start. Other food trucks plan to operate at the location (which still hasn't been developed) on Thursdays and Fridays. The target audience is Silver Line commuters and Dulles airport travelers.
"I thought trucks and trailers had their moment, but with the new Reston Silver Line opening up, they need food there." Hardy said.
Hardy hosted a soft opening with a limited menu yesterday. His trailer is still under construction and should be ready by next week.
