Not everyone can trek all the way to the James Beard House to support Virginia chefs in action. So a group of chefs who recently cooked at the prestigious location decided to recreate that dinner for paying guests at Trummer's on Main last night.
Chefs including Bertrand Chemel and Caitlin Dysart of 2941, David Dunlap of Ashby Inn, Austin Fausett of Trummer's, Dylan Fultineer of Rappahannock and Tim Ma of Maple Ave participated. Trummer's Stefan Trummer and Catoctin Creek's Scott Harris handled cocktails, while local Virginia wineries paired wine with the courses. Dishes ranged from a "partridge in a pear tree" play to a nut-encrusted lamb loin with pickled blueberries and violet hummus. Despite the $175 price tag, the event was oversold, with 88 people attending the Clifton, Virginia event.
