José Andrés' ThinkFoodGroup has been hinting at plans to open a fast-casual chain of restaurants for some time now. The Washington Post reports today the concept is called Beefsteak, and will be vegetable-centric.
The first location will open near George Washington University in Foggy Bottom. "We don't like to call it vegetarian," he says in the article. "We want to call it tasty, fun, sexy, good-looking."
Diners will be able to customize their dishes at Beefsteak. The article says he's been testing recipes for month.
Update: A spokeswoman for ThinkFoodGroup says Beefsteak will open in January 2015. It will be located at GW's Science and Engineering Hall at 22nd and I Sts. NW near the Foggy Bottom metro and will be open to the public, not just students. No specifics were available on menu items.
