Evan Cablayan is the new bar manager for Chevy Chase's Macon Bistro & Larder.
The bartender worked for Craft in Beverly Hills for four years, as well as at Suzanne Goin's Tavern and the Larder. Cablayan will launch a new cocktail menu this Saturday.
His new drinks will be spins on pre-Prohibition cocktails using fresh, local ingredients. Cablayan is a Los Angeles native but spent time in DC when attending Howard University (and working at Sixth Engine, A&D and Smith Commons). He also has a consulting company, Barsmith, and is working on a cocktail book.
Cablayan will lead cocktail classes at the restaurant beginning in December.
