Fans of the omakase, or "chef's choice" experience at sushi restaurants have another option to add to the list: Zentan. The Kimpton restaurant's chef, Jennifer Nguyen, will start offering an omakase tasting menu at the restaurant on Thursdays, for $65. The menu starts this week.

The menu will use seasonal and sustainable ingredients. Nguyen previously worked under chef Masaharu Morimoto, so she's no stranger to the practice. Those who choose the omakase menu in the four seats near the restaurant's sushi bar will get between five and eight small courses. Sample menu items include gilthead sea bream from Japan's Tsukiji Market, razor clams from Oregon (available just a few weeks each year) and Japanese tiger prawns prepared on the robata grill with XO sauce.

Reservations must be made in advance via phone. Specific allergies and dietary restrictions can't be accommodated due to the limited nature of the menu, and cancellations must be made nine days in advance.
