DGS is embracing the drinking culture of delicatessens with a new monthly theme night.
DGS After Dark will take place on the last Thursday of each month, beginning March 27. Bar guy Brian Zipin will whip up $10 specialty cocktails to match a different era, style or spirit of the delicatessen.
First up: In Rye We Trust. The event will kick off at 8 p.m. at the bar, with cocktails like The Diamond Back (Rittenhouse Rye, apple brandy, green Chartreuse) and the New York Sour (aged rye, lemon, sugar, Dow's Ruby Port float). Check out the full menu.
The Diamondback
Rittenhouse 100 proof Rye, Apple Brandy, Green Chartreuse
A powerful drink and a great example of three liquors coming together to create a bold yet balanced cocktail. The Diamondback has somewhat of a local connection since it was named after Diamondback lounge in the Lord Baltimore hotel.
New York Sour
Dad's Hat Vermouth Aged Rye, Lemon, Sugar, Dow's Ruby Port Float
Created in Chicago in the 1880's and later popularized during the New York prohibition era. Instead of red wine we use a Ruby Port float. Dad's Hat Source there rye from local farms in Pennsylvania that use sustainable production methods.
The Sazerac
Sazerac Rye, Sugar, Absinthe, Peychaud Bitters, Lemon.
Many believe this was the first cocktail dating back to pre-civil war times served by New Orleans apothecary Antoine Amedie Peychaud. The Sazerac was originally served with brandy. Its simplicity is a true test to a bartenders skills
Savage Guns
Old Overholt Rye, Pedro Ximenez, Bittermens Mole bitters, orange peel
This cocktail name pays homage to one of the first American westerns to be filmed in Spain, a spin on a Manhattan we replace sweet vermouth with Pedro Ximenez a sweet sherry made in Spain from dried grapes.
Gin is the New Rye
St George Dry Rye Gin, Dolin Rouge, Angostura Bitters, Cherry.
St George Spirits are one of the pioneers of American craft spirits; there dry rye gin starts with a base of 100% pot stilled rye. This cocktail is for fans of Martini's.
Tea and Sympathy
Ceylon infused Jim Beam Rye, Amer Picon, Pomegranate Syrup, Bittermans Orange Cream Citrate, Lemon
A DGS original cocktail. We infuse Jim Beam Rye with Ceylon black tea for one week and served the cocktail over ice with a slice of blood orange
Farmers Almanac
Redemption Rye, Sweet Shine Raspberry Lemon Cordial, Orange Clove Syrup, Orange Twist
This is another DGS original-- this cocktail is sweet and spicy and features West Virginia's Sweetshine Distillery Raspberry Lemon Cordial.
