Opening chef George Vetsch has departed Mount Vernon's new Silo restaurant. The departure was alluded to in this week's Sietsema chat, and the restaurant confirms the exit to Eater. Here's a statement from owner Reza Akhavan:
It is with great sadness that Silo announces the departure of Chef George Vetsch as its Executive Chef. Silo wishes Chef Vetsch the best in his future endeavors and will miss him in our kitchen. Our Sous Chef Calvin Di Giovanni, who's been with us since opening and who has come up with a number of great dishes on his own for Silo's menu, will take over the kitchen."
Silo opened its doors at the beginning of the year at 919 5th St. NW, with a French and Swiss-leaning menu. Vetsch had previously worked for the beloved C.F. Folks restaurant; no word yet on his next move.
