Tysons Corner restaurant Härth has an upgraded kitchen and an expanded menu. The restaurant, located within the Hilton McLean, is still overseen by chef Thomas Elder, who now has more Motague ranges and ovens to work with, along with an expanded pastry kitchen and a gelato machine.
Elder is working with a number of local farms this year for products, including Lanham's Eco Farms, Parker Farms in Oak Grove, Va. and C&E Farms in Cheriton, Va. He also continues to grow produce and herbs on the rooftop (ghost peppers, 12 types of mint and more), and raise bees for honey as well.
The expanded kitchen means the restaurant is putting more of a focus on fire-roasted dishes like pork chops with butternut squash and fired flatbreads. The restaurant is open for breakfast, lunch and dinner. The restaurant had been serving a limited menu these past 12 weeks during the construction.
