Michael Walters IN at Silo

Silo has a new chef to replace their recently-departed opening chef, George Vetsch. Michael Walters is now running the kitchen, alongside chef de cuisine Calvin Di Giovanni.

The chefs have revamped the menu. Gone: the Swiss and French influences. Now, the restaurant is being repositioned as a Modern American bistro. They're also adding new cocktails to the mix. Walters is a veteran of the former Jean-Louis Restaurant at The Watergate, and has also worked under Michel Richard and Roberto Donna (he recently had his own place in Tampa).

The new menu has dishes like sweet and sour wings, a Croque Monsieur with prosciutto, grilled salmon with forbidden rice and a vegetarian lasagna. They've kept some dishes, such as the burger. The restaurant plans to give out free samples of the food on Wednesday.
