Republic has a new cocktail menu and one of the focuses is bitter lemon. Bar Manager Brett Robison and chef Danny Wells collaborated on a homemade bitter lemon syrup that is being used in three drinks on the restaurant's menu, including the whiskey-based Bitter Presbyterian, a play on the gin and tonic and the Virgo, which is similar to the Sazerac.
The new cocktail menu also has some classic drinks, like the Daiquiri. The restaurant has added a new happy hour as well, with $1 oysters, discounted cocktails (including Tom Collins and Aperol Spritzes) and cheap beer, along with $6-$8 bar bites. Happy Hour will be Monday-Friday from 3-7 p.m.
