BLT is Getting Serious About Wagyu with New Flights

When Jeremy Shelton took the reins at BLT Steak in late December, one of his goals was to revamp the steakhouse's Wagyu program. Looks like that goal is already coming to fruition.

The restaurant is introducing a new series of both domestic and Japanese Wagyu flights, featuring 12 different cuts of the prized beef. They're available during dinner service, and there are both three cut and five cut tastings.

The flights are served on a wooden carving board, and focus on cuts from Nebraska, Idaho, Japan and elsewhere in the U.S. The American Fight ($95) has three cuts. There's a five cut, $150 option that mixes both domestic and Japanese offerings. Both come with sides like pickled ramps and roasted bone marrow. Some of the cuts they will feature include:
