Diners at BLT Steak know that if they like bone marrow, they're going to get a solid rendition of the delicacy at the steakhouse. The restaurant's new chef Jeremy Shelton is putting a new spin on the classic dish. The chef's been testing it this week — it goes on the menu tomorrow.
BLT' s galbi-marinated roasted marrow is accented with crispy shallots, radish salad and served with bao buns. The restaurant's Galbi-style marinade is made with a kimchee base, eel sauce, brown sugar, soy, ginger, garlic and Dijon mustard. The chef roasts it, lets the sauce caramelize, and tops the bone with crispy shallots, peanuts, seasame seeds and cilantro.
The dish, which has a kick to it, comes with three roasted bones and a bao bun for $16. Diners who really want to get indulgent can follow with one of the restaurant's new Wagyu flights; Shelton tells Eater they're already selling about four or five of the flights each night, even though the program just started.
