Mitsitam Cafe, the well-regarded restaurant within the Smithsonian's National Museum of the American Indian, just changed over to a new summer menu. Some of the new offerings include a Bolivian-style chili-braised pork shank from the South American region, Elk sliders, turkey, buffalo and duck burgers, a maple-brined turkey and more. Chef Richard Hetzler changes the menu on a quarterly basis.
