New Poste chef Kyoo Eom is putting his own spin on French cuisine at Kimpton's restaurant in Penn Quarter.
Eom has redesigned the brasserie's menu for the fall. He takes over for Dennis Marron, who left to oversee a new Kimpton project in Pittsburgh. Some of his new dishes include a short rib-accented French onion soup, asparagus-wrapped halibut, a lamb burger with harissa mayonnaise (yes, that means the restaurant's Onion Soup Burger is no more), and fried chicken legs at brunch.
James Nelson is handling the restaurant's cocktails. The new dinner menu launches today; lunch follows Thursday and brunch kicks off Sept. 20.
