Dave Hansen of Tapper Restaurant Group is now going to be running operations over at Frederik de Pue's restaurants.
Hansen has been appointed Operations Director of Bord'Eau LLC, the umbrella company for Menu MBK, Table and 42° Catering, according to a press release. Hansen will oversee all three organizations "before turning an eye to new concepts and expansion into new territories," the release says. So expect more from de Pue in the future.
When working for Tapper Restaurant Group, Hansen worked for such restaurants as Pulpo (where he briefly served as chef as well) and Floriana. He recently spent time in London as a restaurant consultant.
